My Go-To Healthy Breakfasts! (UPDATED)
As I’m sure you’ve heard many times, breakfast is the most important meal of the day, but it also happens to be my favorite meal of the day! And if you’re like me, you probably don’t have much time in the morning, so here are a few of my go-to quick, easy and most importantly, healthy breakfast options! These all can be easily modified to how much you want to eat or if you count calories or macros.
easy Oatmeal with nut butter + berries
½ cup Rolled Oats (gluten-free, if needed)
Cinnamon to taste
1/2 - 1 cup of Raspberries, Blueberries, or Strawberries (it’s great with a half of banana too!)
1 - 2 Tbsp(s) of Almond Butter or Natural Peanut Butter
For additional sweetness, you can drizzle a little honey on top, but personally, I think it’s sweet enough as is! :)
Cook oats in water, stir in as little or as much cinnamon as you’d like, a tablespoon or two of nut butter, and top with a serving of fruit. This is a breakfast that you can’t go wrong with, it’s so quick and easy to make and so satisfying!

Sweet Potato breakfast bowl
1 medium Sweet Potato, cooked (directions below)
Cinnamon to taste
1 Tbsp Walnuts (or nuts of your choice)
1 Tbsp Raisins
1 - 2 Tbsp(s) Almond Butter (No salt or sugar added)
You can drizzle a little honey on top of this as well, for additional sweetness, but I love it as is!
Mash sweet potato in a bowl with a spoon, sprinkle with cinnamon, mix in the remaining ingredients and enjoy! Honestly, this sweet potato breakfast bowl is like eating dessert for breakfast!
I typically cook my sweet potatoes in the Instant Pot or Crock-Pot because I think it’s the easiest, but here are the directions for whatever way works best for you! I will usually cook a few potatoes at a time so I can make this breakfast even quicker the next day!
Instant Pot: Add water to the Instant Pot, place the steaming trivet inside then lay the washed sweet potato(es) on top. Use manual mode to set on pressure cook (high) for 15-18 minutes, depending on the size of your potato.
Crock-Pot: Place your washed sweet potato(es) in your crock-pot on low for 6-8 hours or 3-4 hours on high, depending on your slow cooker and the size of your potato(es).
Oven: Place washed sweet potato(es) on a baking sheet, prick with all over with a fork, and bake in the oven at 425 until tender, roughly 45-50 minutes.
These times can all vary depending on the size of your potatoes and all appliances are different as well. Always be sure to check potatoes with a fork occasionally while cooking until the desired doneness is reach.
Paleo Pancakes with Almond Butter + Berry sauce
Cinnamon to taste
1 3/4 C blueberries (or berries of choice)
Maple syrup
1 Tbsp tapioca starch
1/4 tsp salt
Follow the directions on the package of pancake mix to make desired amount, but BE SURE to add cinnamon to the mix because it is a necessity for pancakes, IMO.
While the pancakes are cooking, make the berry sauce! In a pot or pan, combine the blueberries, maple syrup, tapioca flour, and salt. Cook over medium heat, pressing on the blueberries to soften/break down. Cook for 7-9 minutes, until the mixture is thick and no large blueberries remain. Remove from heat or scrape sauce into a small bowl until ready to use.
Once the pancakes are done, top with with almond butter, berry sauce, and maple syrup and enjoy!! This is truly one of our favorite weekend breakfasts to make! Sometimes we’ll make Applegate bacon or sausage on the side, but eggs would be great for a little extra protein!
Yogurt with Homemade Granola + fruit
Organic plain greek yogurt with Stevia drops to taste or vanilla yogurt (I love Siggi’s brand!)
1/4 C Homemade granola—I love this recipe from Gimme Some Oven (or my favorite store-bought is anything from Purely Elizabeth!)
1/2 C Raspberries (or your choice of fruit)
If you’re in pinch and need a filling, delicious breakfast that will be ready in 2 minutes, this is it!! So easy, delicious, and full of healthy protein, carbs, and fats to keep you feeling full and satisfied!
Mix stevia drops with plain greek yogurt, mix in 1/4 cup of granola, and a 1/2-1 cup of berries. There you have it!
